Once upon a time, Roberto Meza was a graduate student at one of the most prestigious technical schools in the nation, Massachusetts Institute of Technology (MIT). But personal health issues brought him to Colorado and ignited a passion for cultivating community through growing food.

In 2017, he launched Emerald Gardens, with friends Casey Coomer, Christopher Rudy and Dave Demerling. Growing microgreens became a passion and labor of love and healing for all of them.

With the help of family, friends and their canine companion and CEO (or Chief Encouragement Officer) Yoda, they attend farmers markets, provide food demonstrations and regularly educate people about the benefits of microgreens. It’s these opportunities to connect and listen to their customers’ unique stories that inspire them most, especially when they hear how much their work matters and how it is transforming health and rebuilding communities.
